Cream of Mushroom Soup

FullSizeRender-1Campbell’s Cream of Mushroom has NOTHING on this savory made-from-scratch soup by Ina Garten (Barefoot Contessa), posted on foodnetwork.com in 2006. I’ve been making this soup for a few years, usually to serve to company in the fall or winter. The intense mushroom flavor comes from making a vegetable stock with the mushroom stems, and adding that to the mushroom cap roux. (There’s that word again, Tom! Roux just means adding flour to butter to make a paste, which thickens cream sauces and soups.) Everyone who’s slurped this soup has absolutely raved about it, including my new bosses we recently hosted. Hey, that’s one way to stay employed—dazzle ’em with butter and cream in dishes like this one!

Here’s a budget tip: I’ve found Trader Joe’s has the best price on all of the mushrooms needed for this recipe. Some of them were about $2 per 8-ounce package, a huge cost savings over Cub foods, where they are often $4-5 per 8-ounce package. TJ’s also consistently has all of these mushrooms on hand. I’ve been to other grocery stores that only carry the shiitake mushrooms seasonally, and they do add a nice nutty nuance so are worth the search. One disclaimer: Those not mushroom fans will find there’s no subtlety of flavor here, so best to avoid this recipe. But the rest of you will love this soup as a side or main dish, with a crusty slice of warm, buttered, baguette. Mmmmmmmmmm…

Serves 8-10

8 ounces fresh shiitake mushrooms
8 ounces fresh button mushrooms (these are the ones that are often just called “mushrooms” on the package…)
8 ounces fresh cremini mushrooms (aka: baby bella)
1 tablespoon olive oil
½ cup plus 1 tablespoon butter, divided
1 large yellow onion, chopped
3-4 carrots, chopped
1½ teaspoon dried thyme, divided
2½ teaspoons salt
1½ teaspoons coarse ground black pepper
2 cups chopped leeks (about 2)*
¼ cup all-purpose flour, or Namaste gluten-free flour blend
1 cup chicken broth
2 cups half-and-half
¼ cup minced fresh flat leaf parsley, or 1 tablespoon dried.

Clean the mushrooms by wiping them with a dry paper towel. Do not rinse in water. Separate the stems, trim off bad parts, and coarsely chop them. Slice the mushroom caps, and cut larger caps in half so pieces are bite-sized. Set caps aside.

To make the mushroom stock, heat the olive oil and 1 tablespoon butter in large pot or Dutch oven. Add chopped mushroom stems, onion, carrots, 1 teaspoons thyme, salt, and pepper and cook over low heat for 10-15 minutes, or until vegetables are soft. Add 5 cups water, then bring to a boil. Reduce heat to low, and simmer for 30 minutes. Strain, reserving liquid. There should be about 4 cups of stock. If not, add water to 4 cups.

Heat the remaining ½ cup butter in the pot and add leeks. Cook over low heat for 15-20 minutes, or until leeks are soft and begin to brown. Add the sliced mushroom caps and cook for 10 minutes, or until tender and browned. Sprinkle the flour or Namaste gluten-free blend over the mushrooms, stir, and cook for 1 minute more. Add the chicken broth and stir to remove bits from bottom of pot, and cook for an additional 1 minute. Add the mushroom stock and remaining 1/2 teaspoon thyme, and bring to a boil. Reduce heat and simmer for 15 minutes. Stir in the half-and-half and parsley, and season with salt and pepper to taste. Heat on low (do not boil) and serve.

*NOTE: Leeks often are full of sand and grit, so it’s best to chop them, then soak them in a bowl of cold water. The sand will sink to the bottom, and the leeks will float on top. Scoop them out of the water, and drain in colander.

 

Baked Northern Beans with Rosemary and Mustard

FullSizeRenderTake a break from basic baked beans with this bacon-laced white bean side dish. I’d clipped the recipe from the May 2007 edition of Better Homes & Garden magazine, and had yet to try it out. Since it called for rosemary, and I’m trying to find ways to use up my fresh herbs before the first frost, I finally got around to giving it a whirl. I liked it, but it isn’t a “star” dish. Not everything on the table has to take center stage though, does it? It’s also not terribly gorgeous to look at, as you can see from my sad photo attempt. (I’m really selling you on this one, aren’t I!) It would work for summer barbecue with brats or burgers, and it would also pair well with a winter meal of roast pork, beef, or whatever meat you choose. It’s got that homey, comfort-food vibe going on, so tag this one to make this winter.

The original recipe called for four 16-ounce cans of butter beans or Great Northern beans, but I wanted to use a bag of dry Great Northern beans I had on hand. I’ve also heard that the canned beans are rather high in sodium, so thought it might be a healthier dish if I used the dry beans instead. Directions below include overnight soaking of a bag of beans—which required pre-planning, but wasn’t a ton of prep otherwise. My husband didn’t think the dish was zippy enough, but he’s burned out his taste buds by constantly dousing his food with cayenne pepper. Consider the source. My taste-tester Emily and I thought they were tasty, so I’ll be making these again some time—when my husband’s not home for dinner.

Serves 6-8

1 bag dry Great Northern beans
1 teaspoon salt
8 slices bacon
1 large onion, chopped
2 tablespoons chopped fresh rosemary (or 2 teaspoons dried rosemary)
2 tablespoons chopped Italian parsley
¼ teaspoon coarse ground black pepper
1 (8-ounce) container dairy sour cream (1 cup)
½ cup chicken broth
1 tablespoon all-purpose flour or Namaste® gluten-free perfect blend
1-2 tablespoons Dijon mustard (I used 1, but I think it could have used 2)

Rinse dry bean in cold water, and then put in Dutch oven. Cover with cold water, and let soak overnight. Drain off water and add water to 1-inch above beans. Add 1 teaspoon salt, cover, and bring beans to a boil. Reduce to simmer and cook for 30-45 minutes, or until beans are tender. Drain and set aside.

Preheat oven to 325° Fahrenheit. In a skillet, fry bacon over medium heat until crisp. Line plate with paper towels, and place bacon on towels to drain. Let cool. Drain skillet of all but 2 tablespoons bacon fat. Add onions and cook until translucent. Add rosemary, parsley, and black pepper and sauté until fragrant. Transfer to a large bowl. Crumble cooked bacon and add to beans.

In small bowl, whisk together sour cream, chicken broth, flour or gluten-free flour blend, and Dijon mustard. Add to beans and stir until all ingredients are combined. Place in a 2-quart casserole dish and bake, covered, for 45 minutes. Serve.

MAKE AHEAD TIP: Can make bean dish and not bake, and then store covered in frig for a day or two. Let sit at room temperature for about an hour before baking.

Spinach Artichoke Hummus

FullSizeRenderA can of artichokes, and a few handfuls of fresh spinach make for a new twist on classic hummus. I found this recipe in the Fall 2016 edition of Lunds & Byerly’s Real Food magazine, and couldn’t wait to try it. My son Mitchell loooooves spinach in everything, so I wanted to see if this would be another way to give him his spinach fix next time he’s home from college. It was a nice dip for corn tortilla chips, and would actually be great with cukes, carrots, and jicama sticks as well. And if you’re a raw broccoli dipper, go for it. (I personally avoid broccoli in a raw veggie tray at gatherings. That, and raw cauliflower florets…those veggies are best eaten when roasted, if you ask me. But I digress!) If looking for some interesting appetizer ideas, this would be good to include in a hummus trio, with Spicy Sweet Potato Hummus (previously posted), and the classic hummus, for the true hummus aficionados. Serve with warm pita bread triangles, and your family and friends will gobble these up.

Serves 6-8

1 (14-ounce) can garbanzo beans*, rinsed and drained
1 (14-ounce) can artichoke hearts, drained
3-4 cups fresh spinach
2 garlic cloves
4 tablespoons lemon juice
3 tablespoons extra virgin olive oil
2 tablespoons tahini paste
½ teaspoon salt

Combine garbanzo beans, artichoke hearts, spinach, garlic, lemon juice, olive oil, tahini paste, and salt in food processor, and pulse until smooth. Stop to scrape down side occasionally. Serve. Leftovers may be stored in a covered container in the frig for up to five days.

*NOTE: The original recipe called for soaking dry chickpeas overnight, and then boiling them for an hour, and letting them cool. That sounded like waaaaay too much work for me, so I used the canned chickpeas (aka: garbanzo beans). Also, I added more lemon (as noted above) then called for in the magazine recipe, as it seemed to need more zing.

Indian Spiced Beef Wraps with Cilantro Mint Sauce

FullSizeRender 2This meat dish has so much flavor it could convert a vegetarian. I’m not a big fan of beef, but I absolutely LOVE all the crazy spices—cilantro, ginger, cumin, coriander, fennel, turmeric, and even cinnamon—packed into this recipe. The contrast between the spiced meat and the chilled cilantro mint yogurt sauce is perfect. Add the fresh cucumber slices and sweet cherry tomatoes, and it’s a dish to die for. In fact, I once thought a guest of ours actually WAS dying (or had broken a tooth) when I served this meal. My son Justin had brought home a pack of starving college guys, and I thought they’d appreciate some quality meat, served up in a format they probably weren’t getting in the school cafeteria. His friend Brady starting moaning after his first bite, and I looked up in alarm. “Are you OK?” Brady sheepishly smiled and said, “I’m fine! It’s just sooooo GOOD.” The others laughed, but concurred.

The original recipe directions said to mix meat, herbs, and spices together and shape into meatballs or sausages, skewer them, and grill them. I tried that the first time I made this, and it was a ton of work, and then the meat didn’t stretch as far as I would have liked. So now I just mix it all together and brown the meat in a pan, and it works great. Now to give credit where credit is due. I got this recipe from the Lunds & Byerly’s Real Food magazine some time in 2010, I’m guessing. I don’t have the exact date recorded with my magazine clipping, but I remember about when Justin would drop in with that particular crew. Good times had by all. 

Makes 6-8 servings

For Spiced Meat:
1½-2 pounds quality lean ground beef (or lamb—if you like lamb…)
¼ cup plain yogurt
¼ cup chopped fresh cilantro
¼ cup finely chopped scallions (aka: green onion, Tom)
1 tablespoon cornstarch
2 teaspoons minced fresh garlic
2 teaspoons minced fresh ginger
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon turmeric
1 teaspoon kosher or sea salt
½ teaspoon ground fennel
½ teaspoon coarse ground black pepper
¼ teaspoon cayenne pepper
1/8 teaspoon cinnamon

For Cilantro Mint Sauce:
½ cup plain yogurt
3/4 cup packed fresh cilantro leaves
¼ cup chopped fresh mint
2 scallions, cut into 2-inch pieces
½-inch piece of peeled fresh ginger, quartered
1 tablespoon fresh lime juice
1 clove garlic, quartered
1 teaspoon sugar
½ teaspoon ground cumin
½ teaspoon salt

Serving suggestion:
Flour tortillas*, or corn tortillas (for gluten-free option)
1 cucumber, sliced
1 cup cherry tomatoes, halved
1 yellow onion, sliced (optional—sometimes we want these, sometimes we don’t!)
Crumbled feta cheese

To make meat: Combine beef, yogurt, cornstarch, and all the herbs and spices in large frying pan. Cook until no pink remains in meat. Keep on low heat until serving.

To make sauce: Combine all ingredients in a food processor, and pulse until smooth. Can chill until serving.

To serve wraps: Briefly heat tortilla on hot griddle, then top with warm spiced meat, cucumbers, tomatoes, feta, and chilled yogurt sauce. Fold in half and eat like a taco. Get ready to be amazed at the flavor explosion in your mouth.

*NOTE: I love to take this recipe up even ONE MORE NOTCH by making my own tortillas. I sometimes do these a day ahead and store in frig with parchment paper between them, and then reheat on the griddle right before serving. Just like the spiced meat, they are truly moan-worthy.

Fall Display Pots

FullSizeRenderKale, swiss chard, and Jerusalem cherries make an interesting combo for fall pots—these happen to greet guests at my front door. The summer lime green sweet potato ivy was getting a little leggy, and the coleus had grown gargantuan, so it was time to refresh my entryway buckets with plants that love it cool and crisp. I ripped most of the plants out and put in this grouping, leaving only the green spikey thing (can’t remember what it’s called…) in the middle.

The feathery golden ornamental grass at the back adds a nice texture, something understated needed with everything else being so showy and attention-seeking. In the past, I’ve put in one tall spike or grass, and filled the rest of the bucket with different kinds of kale. But they didn’t have the variety in colors and textures I wanted this year, so I tried something new, proving you can teach an old dog new tricks. (FYI, these plants are all from Bachman’s—the nursery with the most selection close to my home.) While the rainbow Swiss chard IS edible, many signs warned the Jerusalem cherries are NOT. Apparently they’re quite poisonous to pets and kids! So I’m not sure if that will affect the Swiss chard growing in the same soil or not, if we wanted to chop some up for dinner. I know my husband Rich is just dying to try the chard…again, NOT. 

BLT Salad

FullSizeRender-1My mother has been blessing us with buckets of tomatoes from her garden, and the red orbs are threatening to take over the kitchen—so I’m kinda on a BLT roll. My husband was grilling brats one evening, and I wanted a side salad that we hadn’t had a gazillion times already. So I came up with this BLT combo and taste-tested it on our guests Andy and Nancy, and their daughter Emily, and they all thought it was da bomb. Thankfully, there was a little leftover so I could have it for lunch again the next day, ’cause I thought it was delish, too. I think the trick to infusing the greens with the “BLT” flavor, was sautéing the leeks in a little bacon fat. They really held onto the nuance of the bacon (if bacon has a “nuance,” that is…it’s sort of the bully of meats as far as taste.)

I considered a vinaigrette dressing for this salad, but since BLT’s are all about the mayo, thought I better stick with a creamy mayonnaise-based dressing. It was a good decision! It really enhanced the other ingredients, without over-powering. My only concern was that it was a little thicker than I would have liked, so it may need more vinegar to thin it down. I’ve given a range here, but I used just 1 tablespoon. More might make it too tart—try it and let me know!

Serves 6-8

For dressing
¼ cup Hellmann’s real mayonnaise
2 tablespoons fresh basil pesto
1-2 tablespoons apple cider vinegar

For salad
1 leek, sliced thin to all but toughest green part*
1-2 tablespoons bacon fat
1 head Romaine lettuce, julienned
¼ cup fresh parsley, chopped
½ of a cucumber, sliced and quartered
2 ripe avocados, cubed
2 large tomatoes, diced, or 2 cups cherry tomatoes quartered
6-8 slices of bacon, fried crisp, drained on paper towels, and crumbled

To make dressing: Whisk together mayonnaise, pesto, and 1 tablespoon apple cider vinegar. Add more vinegar if needed to thin. Set aside.

To make salad: Saute leeks in bacon fat over medium heat, until leeks begin to caramelize (turn light brown on edges). On large serving platter, layer lettuce, parsley, cooked leeks, cucumber, and avocados. Drizzle with dressing, then top with tomatoes, and crumbled bacon.

*NOTE: It’s best to chop leeks, then soak in a bowl of cold water, in order to let the sand and dirt settle to bottom of the bowl. Then scoop out the leeks and let them thoroughly drain in a colander before frying in the bacon fat. Leeks tend to hold on to a lot of dirt and sand between their layers as they grow. It’s rare to purchase a leek that has been thoroughly rinsed enough to cook it without soaking first.

Super BLT with Pesto Aioli

FullSizeRender‘Tis tomato time, and if you’ve got them coming out of your ears like we do, this twist on the classic BLT sandwich will help you use up your ‘maters. The pesto aioli gives it extra zip, and adds another layer of flavor to the fresh tomato, smoky bacon, and crisp lettuce. So I used up my stash of tomatoes AND my fresh basil pesto that I just made again—a win-win. I also added sliced turkey, and white cheddar cheese to these sandwiches, because I feel like a sandwich with just bacon for meat isn’t really a sandwich. (My husband would disagree—he fried up half a pound of bacon for his two sandwiches the night we made these. When I questioned his quantity, he called me a Bacon Nazi. Ouch. First time I’ve heard those two words together in a sentence…how about you?)

I thought that this might be too simple of a “recipe” to post, but I actually get the most response from all of you when I post stuff I think is too easy to bother sharing (aka: “Judy easy,” in the scale used previously). I used pumpernickel bread for the sandwiches pictured here, but I also like Trader Joe’s 100% rye bread, which I’ve been told is gluten-free. Either of those options gives you more flavor in your bread than straight up white bread. Another bonus! 

Serves 2-3

For pesto aioli
¼ cup Hellmann’s real mayonnaise (or make your own, recipe below!)
1 tablespoon fresh basil pesto

For sandwiches
Deli turkey, sliced thin
White cheddar cheese, sliced
Romaine lettuce leaves, rinsed and dried
Bacon strips, cooked (2 per sandwich, unless you’re Rich)
Sliced fresh tomatoes
Pumpernickel or rye bread, toasted

Slather toasted bread with generous amount of pesto aioli, then layer on turkey, cheese, lettuce, bacon, and tomatoes. Prepare to be amazed.

*NOTE: Aioli has come to be the name given to any flavored mayonnaise. Traditionally, it’s been an emulsified oil combined with fresh garlic. At least that’s the Spanish version. The French version of aioli has an egg added into the emulsifying process, which makes it more similar to mayonnaise than the Spanish recipe. Use the word “aioli” when you want to impress your dinner guests with your mad kitchen prowess.

To make your own mayonnaise (recipe courtesy of Whole30):
1¼ cups olive oil (not extra virgin), divided
1 egg
½ teaspoon dried mustard
½ teaspoon salt
Juice of 1 lemon

In food processor or blender, combine ¼ cup olive oil, egg, dried mustard, and salt. Blend until combined. Very, very slowly, drizzle in the remaining 1 cup of olive oil with motor running, and process until oil is emulsified (thickened to mayo consistency). Add juice of lemon and pulse until combined. Refrigerate for up to one week, but no longer.

Oatmeal Apple Pie Cookies

FullSizeRenderLove apple pie or apple cobbler, but would like those flavors in a bite-sized portion? These apple and oatmeal cookies give you a hint of all-American apple pie without the hassle of making pie crust, something I personally have never mastered. (Whoever coined the phrase, “easy as pie” was nuts, in my opinion.) Since the cinnamon, oats, and apples have a fallish feel, put these on your list to try when the air gets crisp, and the leaves start to turn colors.

Oat-laden baked goods are a favorite with my sons, so the S’more Cookies previously posted got rave reviews the first time I made them. But my son Justin was kinda “meh” about the combo, only because he’s not super into s’mores. (I know, I know…what on earth is wrong with him?) He thought that the cookie base would be better with apples and a cream cheese frosting, and when he texted me a reminder of his suggestion one weekend, I said I’d give it a whirl. 

I was a little unsure about the order of the filling and frosting—should I fill them first and then frost after they were cool? Or drop in some frosting and then top with the apple pie filling? So I tried it both ways, then taste-tested on my family (plus my son Mitch’s friend Karl, one of my most ardent food admirers). They had no preference, gobbling both with equal enthusiasm. But they did vote for the ones with pie filling on top as they had a stronger apple flavor. They also said they really, really liked these because they aren’t an achingly sweet cookie—more in the vein of an apple granola bar. How do you like that! Tested by a discerning taste-testing panel before being posted. You’re welcome.

Makes 24-32 cookies

For cookie dough:
4 cups old-fashioned rolled oats
1½ cups all-purpose flour
1 cup finely crushed graham crackers (about 15 squares)
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon salt
¼ teaspoon cloves
1 cup butter, softened
1 cup packed brown sugar
½ cup granulated sugar
2 eggs
¼ cup milk
1 tablespoon vanilla

For frosting and filling:
1 (8-ounce) package of cream cheese, room temperature
1 cup confectioners sugar (aka: powdered sugar, Tom…)
Drizzle of milk, 1-2 tablespoons
1 (21-ounce) can of apple pie filling

Preheat oven to 375°. In medium bowl, combine oats, flour, graham cracker crumbs, baking soda and powder, cinnamon, and salt. Set aside.

In large mixing bowl, beat butter until smooth. Add brown sugar and beat again. Add granulated sugar and beat until butter and sugars are light and fluffy. Add eggs one at a time and beat until eggs are incorporated. Add milk and vanilla and beat again. Slowly mix in the oats and flour mixture with the mixer until all ingredients are combined.

Cover bowl of dough with plastic wrap, and chill for 1-4 hours. Line cookie sheets with parchment paper.* Drop spoonfuls of dough onto prepared baking sheets, 12 per sheet. Bake in preheated oven for 8-9 minutes.

While cookies are baking, make frosting. Put cream cheese in small mixer bowl, and beat on high until light and fluffy. Add the confectioners sugar, and beat on low until combined. With mixer still on low, drizzle in milk and vanilla, and once the liquids are incorporated, return to high and beat until frosting is creamy. Set aside.

Open can of apple pie filling, and use long thin knife to dice apples while still in the can. Remove cookies from oven and make a slight impression in hot cookies with the back of a spoon. Put a generous tablespoon of frosting in the indent, and then add a dollop (another tablespoon) of apple pie filling on top of each cookie.

Return cookies to oven for 3-4 minutes, or until edges of cookies are golden brown. Cool on baking sheet for a few minutes, then remove to wire rack to cool completely before storing.

*NOTE: I ended up making these without parchment paper ’cause I forgot to use it, and they were fine! Needed a good, stiff spatula to get them off the pan, but the parchment paper wasn’t as necessary as I thought.

Wild Rice, Chicken, and Grape Salad

IMG_1710Cold wild rice? Ya sure, you betcha. We Minnesotans typically like our wild rice simmered in a soup, but this salad recipe will get you out of your comfort zone. I recently went searching through my previous blogs, sure that I’d posted this recipe long ago. It’s such a favorite with family and friends, that I thought I’d shared it already. Not so. I created this recipe several years ago based on a salad I’d had at a deli somewhere, probably Byerly’s. The combination of chewy wild rice and sweet grapes is perfect in the savory, creamy dressing, once the whole concoction has been chilled. Bring it for lunch, serve it for supper, or share it with others at a potluck picnic.

If you really want to punch up the flavor, make your own mayo, using the simple recipe for Whole30 mayonnaise below. You’ll need to make it at least 3 hours before you start on the rest of the salad, so it has sufficient time to chill. If you don’t, it’ll turn back into olive oil once the mayo hits the warm rice. And how did I gain that bit of culinary wisdom? Personal experience gained through wild rice salad lost. It wasn’t pretty, people.

Serves 6

2 cups wild rice, rinsed and drained
1 cube chicken bouillon
½-1 cup Hellmann’s mayonnaise (or make your own with recipe below)
1 tablespoon Penzy’s Northwoods seasoning OR 1 teaspoon sweet paprika, and a dash each salt, pepper, thyme, cracked or powdered rosemary, and garlic powder
1-2 cups green grapes, sliced
4 stalks celery, diced
4-5 scallions, sliced
6 chicken tenderloins, grilled and chopped into bit-sized cubes
½ cup pecan halves, toasted (optional)
4-6 leaves of Romaine lettuce (optional serving suggestion)

In small Dutch oven or large sauce pan, combine the wild rice, 8 cups water, and the bouillon cube. Cover pot and bring to a boil. Reduce to simmer, and cook for 45 minutes (or until some of the grains have popped), covered. Drain off any remaining water and put rice in colander. Rinse with cold water to shock, so that rice stops cooking. Let drain and cool for 15-30 minutes.

In large bowl, combine mayo and seasonings, stirring until incorporated. Add in cooled rice, grapes, celery, scallions, and cooked chicken. Toss to coat all ingredients with dressing. If using nuts, stir in right before serving. Optional: serve salad on bed of Romaine lettuce.

To make your own mayonnaise:
1¼ cups olive oil (not extra virgin), divided
1 egg
½ teaspoon dried mustard
½ teaspoon salt
Juice of 1 lemon

In food processor or blender, combine ¼ cup olive oil, egg, dried mustard, and salt. Blend until combined. Very, very slowly, drizzle in the remaining 1 cup of olive oil with motor running, and process until oil is emulsified (thickened to mayo consistency). Add juice of lemon and pulse until combined. Refrigerate for up to one week, but no longer.

Pesto Chips

IMG_1718Bunches of fresh basil and some other kitchen staples are all you need to make these incredibly fragrant and savory appetizers. These are pretty easy to whip up, yet your kitchen will smell like you’re a seasoned gourmet who’s been slaving at the stove all day. I’ve been making these for years to serve either as appetizers, or as a side to a meal of grilled meat, veggies, and some fruit. When tomatoes aren’t in season, these are great with just the tortillas, pesto, and grated cheese. I often made these sans tomatoes for an after-school snack for my boys. (Hmmmmm. Maybe that’s why they developed rather sophisticated food palettes. They did occasionally get Rice Krispy bars or other more kid-friendly fare…occasionally.)

Farmer’s markets are teaming with fresh basil, parsley, and tomatoes this time of year. I got the most delicious Roma tomatoes this weekend from a little Saturday morning Farmer’s market in West St. Paul (Icy Cup parking lot, 63 George Street, corner of George and Stryker. My friend Sue’s daughter, Nellie (and her new husband Stephen), have a booth there selling organic produce from their farm, Whistling Thistle. The Roma’s I got from them were perfect for these, as they were meaty and had a lower moisture content than standard grocery store ‘maters. That’s essential to keep the chips crispy once baked.

Makes 8 ounces pesto

For pesto:
1 cup firmly packed fresh basil leaves (washed and rinsed)
½ cup fresh parsley springs (without stems), or ¼ cup dried parsley
½ cup grated Parmesan cheese
1/3 cup olive oil
¼ cup slivered almonds (or pine nuts)
1 large clove garlic, quartered
¼ teaspoon salt

For chips:
Corn or flour tortillas
Shredded aged mozzarella, or cubed fresh mozzarella
Roma tomatoes, diced

Preheat oven to 375° Fahrenheit. In a blender or food processor, combine basil, parsley, Parmesan cheese, olive oil, almonds, garlic, and salt. Cover and blend or process with several on-off turns until paste forms. Stop machine to scrape down sides as needed.

Spread a few tablespoons of pesto over one of the tortillas, and put it on a baking sheet. (Flour tortillas are tastier, but I’ve used corn tortillas to make these gluten free.) Sprinkle cheese of choice on top, then repeat process for desired number of tortillas. Bake in preheated oven for 10 minutes, or until edges are crispy and slightly browned. Cut into wedges and serve as is, or sprinkle with the diced tomatoes, then cut and serve.

NOTE: If not using the pesto immediately, store in airtight container and refrigerate up to a week, or freeze for 6-12 months.
