Carrot Cake Cookies

FullSizeRenderI love carrot cake, but it seems like a special-occasion dessert, not a make-any-old-day deal. So when I ran across this recipe for carrot cake cookies that promised the same moist deliciousness without the cake fuss, I thought I’d give them a spin in the old KitchenAid. The recipe from the December 2014 issue of Real Simple said it made only 16 cookies, which is a snack for two at our house, so I doubled it. But then I ended up with 32 frosted cookies, which can’t be stacked in a container. So I brought them to my friend (and fellow blogger) Kathy’s house when she invited us for dinner, asking them to consume a few so I didn’t have to get creative with storage. No hardship on their part! We were barely home before she was texting to ask for the recipe, saying her husband was craving more of the tasty muffin-like morsels. Since you may have similar trouble with storage, the recipe here is for a single batch. Oh, and I added cloves to the spices, and used more confectioners sugar in the frosting than there was in the Real Simple version. They had also suggested these be made as sandwich cookies—two cookies with frosting between thembut my taste-testers decided that wasn’t nearly enough frosting-to-cookie ratio. And you gotta give the people what they want! And they want these perfect autumn spice cookies.

Makes 16 cookies

Ease rating: medium

1½ cups all-purpose flour
1 teaspoon ground cinnamon
½ teaspoon baking soda
½ teaspoon salt
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves
½ cup (1 stick) butter, room temperature
1 cup packed dark brown sugar
1-2 large eggs (1 makes them more cookie-like in texture, 2 makes them more cake-like. If doubling recipe, 3 eggs is perfect amount.)
1 teaspoon vanilla extract
1½ cups coarsely grated carrots (2-3 medium)
1 cup chopped pecans
½ cup raisins

Frosting

8 ounces cream cheese, room temperature
1 cup confectioners sugar
1 teaspoon vanilla
1-2 tablespoons milk—whatever is needed to get frosting to spreading consistency

Combine flour, cinnamon, baking soda, salt, nutmeg, and cloves in a mixing bowl. Set aside. In mixer fitted with paddle attachment, cream butter on medium-high. Add sugar and cream again until light and fluffy. Beat in egg (or eggs—one at a time if using two), then vanilla. Scrape down bowl occasionally. Reduce speed to low, and slowly add in flour mixture. Stir until just combined. Fold in the carrots, pecans, and raisins. Cover and chill for 1 hour or up to 2 days.

Preheat oven to 350° Fahrenheit. Drop 1-2 tablespoons of dough onto baking sheet, 12 per sheet. Bake for 8-10 minutes, or until golden brown around edges. Let cool on baking sheet for about 5 minutes, then transfer to wire rack to cool completely before frosting.

For frosting: Whip cream cheese in mixing bowl. Slowly add confectioners sugar until it’s all incorporated. Add vanilla, and milk, if necessary, to get frosting to spreading consistency. (You do not want this too runny, as this is not intended to be icing.) Frost cooled cookies. Store frosted cookies in airtight container. As this frosting recipe will frost a double batch of cookies, store any remaining frosting in frig for next time you make these cookies.

Lime Bars

IMG_1078Feeling citrusy? Try these refreshingly zippy lime bars for a break from all the pumpkin-flavored offerings that take over the world in the fall. These are the same recipe as the lemon bars you’ve all tasted before (they often appear at potlucks or post-funeral lunches), just subbing in lime for the lemon in the same amounts. I won’t give credit to any one source, because it would be easier to tell you who doesn’t post this recipe on their blog or have it printed in their cookbook—that’s how popular it is. I did see one source that suggested the yield was 72 bars. Maybe if you’re feeding mice, you could cut them that small. But not on my watch, no sir! I like my sweets substantial. If your teeth don’t ache from the size of the bar and the concentration of sugar, I’ll hang up my apron for good.

Makes 18-24 bars

Rating: Easy

2 cups all-purpose flour
½ cup confectioners sugar
1 cup butter, cold
4 eggs
2 cups sugar
½ teaspoon salt
13  cup fresh lime juice
1 teaspoon lime zest
Additional confectioners sugar for topping

Preheat oven to350° Fahrenheit. Combine flour and sugar; cut in butter. Press crust into 13″x9″ pan and bake for 20-25 minutes.

Meanwhile, beat eggs on high with whisk attachment until pale yellow. Gradually add sugar, salt, lime juice, and lime zest. Continue beating on high. Pour over hot crust.

Bake another 20-25 minutes until golden brown. May need to cover with foil to avoid over-browning towards end. Dust with confectioners sugar. Cool and cut into bars.

Black Bean Brownies

IMG_1093If it wasn’t in the title, you wouldn’t believe the secret ingredient in these moist and chocolatey gluten-free brownies was a can of black beans! I found this recipe on food.com, and it  had been raved about by many-a reader. I’m experimenting with a gluten-free diet, and have been going crazy for some baked goods, preferably something that didn’t taste like ground chalk had been used in lieu of flour. (Those of you who’ve had to avoid gluten for a while know what I’m talking about…) This looked intriguing, and as it only makes a 9″x9″ pan, I figured I didn’t have much to loose if they were nasty. But surprise, surprise! They weren’t a waste of ingredients or time—they went together in just minutes, and tasted pretty good.

IMG_1080The first time I made these, I added both a teaspoon of baking soda and baking powder to the mix, as other reviewers suggested it would make them more cake-like. That was too much leavening, and they tasted metallic. (They also sunk in the middle, another sign of too much soda or powder.) I dusted them with powdered sugar instead of frosting them, and as my co-worker Darin said, they looked so rich and dark, you expected a little more chocolate taste than you got. (Darin is SUCH a whiner… Not!) So the next time I made them, I frosted them with half a recipe of buttercream frosting (from the back of the Hershey’s cocoa container), and that gave me the rich chocolate flavor I was lusting after. Using only 1 teaspoon baking soda worked better, too. The next time I make them, I think I’ll try them without any soda, and see if they come out fudgey, or just gooey. 

Note that you will need a blender or food processor to have success with this batter, and you’ll want to puree until no grains of bean remain before baking. Other than that, this recipe is a piece of cake! Or more accurately, a chunk of brownie. 

1 (15½ ounce) can black beans (rinsed and drained)
3 eggs
3 tablespoons oil
6 tablespoons cocoa powder
1 teaspoon salt
1 teaspoon vanilla
¾ cup sugar

Buttercream frosting

3 tablespoons butter, room temperature
1 1/3 cups confectioners sugar
1/4 cup cocoa powder
1-2 tablespoons milk
1 teaspoon vanilla

Preheat oven to 350° Fahrenheit. Combine ingredients in a blender or food processor and pulse until completely pureed. Pour into a greased 8″x8″ or 9″x9″ cake pan or baking dish. Bake for approximately 30 minutes. Let cool completely before frosting or cutting.

For frosting, cream butter in medium mixing bowl, using wire whisk attachment for mixer. In separate medium-size bowl, combine powdered sugar and cocoa. Add about half of sugar and cocoa to creamed butter, then drizzle some milk into bowl and stir. Add the rest of sugar/cocoa, and the vanilla, and as much milk as needed to make frosting a good spreading consistency. Frost cooled brownies. Lick bowl, spatula, beaters, etc. Wipe face to remove evidence.

Cranberry Pecan Bars

IMG_1157A pop of rich red makes these cranberry bars look special enough for company, yet these sweet-tart treats are easy enough to make any old day. With cranberries showing up in grocery stores soon, I thought I’d share this delicious recipe I found on www.food.com, sent in by Wisconsinite and cranberry-lover Bonnie Young. They use mostly kitchen staples, and mix up in just a few minutes. I found they work better with frozen cranberries, as the fresh tend to mush and bleed into the batter and that makes them not so pretty. But the frozen berries make the batter very stiff, so you have to pat (or smash, if that’s more your mood) it into the pan with a spatula. Worth the effort though—the result is a deliciously chewy cake-like bar with just enough tang to keep you wanting more.

Makes 12-15 bars

½ cup butter, softened
2 eggs
1½ cup granulated sugar
1 teaspoon vanilla
1½ cup all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
½ cup chopped pecans
2 cups frozen cranberries
Powdered sugar

Preheat oven to 350° Fahrenheit. Butter a 9″x13″ baking dish and set aside. In large mixing bowl, cream butter. Add eggs and cream again. Add sugar, and beat until light and fluffy. Add vanilla and beat again. In medium bowl, combine flour, baking powder, and salt. Gradually add to creamed butter and sugar mixture. Stir in nuts with large wooden spoon until combined. Fold in cranberries. Press batter into prepared baking dish and bake for 40-45 minutes, or until top of bars are light golden brown. (Bars may not appear to be cooked all the way through when removed from oven, but they will set up as they cool.) Sprinkle with powdered sugar and let cool to room temp before cutting with very sharp knife.

Nectarine and Blueberry Crisp

FullSizeRenderWhen sweet peaches and nectarines are in season, you just gotta gobble them up. This crisp or crumble recipe is one I’ve posted before using rhubarb and strawberries, but I just had to share this with you using the perfect combination of nectarines and blueberries.* Fresh fruits are great when available, but this works just as well using frozen fruit in the winter. How much fruit you put in is really up to you—basically, you want to fill your pan or dish about 3/4 full (as shown here). Fruit does shrink as it bakes, so don’t worry about it overflowing in the oven.

Craving apple crisp or crumble? This topping is also wonderful with apples, so I’ve given you that variation below as well. Top baked crisp with ice cream or serve in a bowl with heavy cream poured over it. Heavenly.

Serves 8-12

Fruit base

4-6 cups chopped fresh or frozen nectarines or peaches
2-4 cups fresh or frozen blueberries

Topping

2 cups old-fashioned rolled oats
1 cup packed brown sugar
3/4 cup all-purpose flour
1 1/2 teaspoons cinnamon
1/2 teaspoon salt
1/4 teaspoon grated nutmeg
1/4 teaspoon ground ginger
3/4 cup butter, melted

Preheat oven to 300° Fahrenheit. Grease 9″x13″ or other 3 quart baking dish. Spread fruit in pan. In medium mixing bowl, add oats, sugar, flour, and spices, and stir to combine. Pour melted butter over oats and toss until butter is incorporated. Sprinkle oat mixture over fruit and bake uncovered in preheated oven for 1 hour. Let cool 10-15 minutes before serving.

NOTE: You can also bake this dish at 375° Fahrenheit for 30 minutes if you’re in a rush, and it’ll be just as tasty.

For Apple Blueberry Crisp

Granny smith apples and blueberries make a nice tart-sweet combination. Peel, slice and chop 4-5 fresh Granny Smith apples, and mix with 2-4 cups fresh or frozen blueberries. Toss with a tablespoon of lemon juice, then add to pan, and add topping. Bake as directed above.

For Apple Crisp

Peel, slice and chop 6-8 of your choice of fresh baking apples. Add to pan, and then top with oats mixture. Bake as directed above.

Blueberry Breakfast Bars

IMG_0979Breakfast, lunch, dinner, or bedtime snack—these bars are a hit any time. This was a recipe request when I wrote a food column for the St. Paul Pioneer Press, and was wildly popular with subscribers.  It had been circulated by WIC as a healthy (or healthier than sugary cereals) and kid-friendly recipe at one time. Fresh or frozen fruit work equally well in these bars, and I’ve made them with either blueberries or raspberries, too. Strawberries do NOT work well in this recipe, so save yourself the hassle (and waste) and don’t bother with those berries. Because these are deliciously soft, they fall apart when I’ve tried to send them in a school lunch bag, so cut and serve the bars at home, or bring a pan to share with co-workers. Others will be glad you decided to share the love.

Makes 15 bars

2 cups old-fashioned oatmeal
1½ cups all-purpose flour
¾ cups firmly packed dark brown sugar
½ cup chopped pecans
½ teaspoon baking soda
¼ teaspoon salt
¾ cup butter, melted
2 cups fresh or frozen blueberries (or raspberries)
½ cup granulated sugar
2 tablespoons cornstarch
2 teaspoons lemon juice (optional – I’ve made it without and can’t taste the difference!)

Preheat oven to 350° Fahrenheit. Grease a 9″x13″ glass baking dish. In a large mixing bowl, combine oats, flour, brown sugar, nuts, baking soda, and salt. Pour melted butter over top and stir until all ingredients are coated with butter. Reserve 1 cup of the mixture. Press remaining mixture onto bottom of prepared dish. Bake for 10 minutes.

While base is baking, combine berries, sugar, and 2 tablespoons water. Bring to a boil. Simmer for 2 minutes, uncovered, stirring occasionally. In small bowl, combine 1 tablespoon water cornstarch, and lemon juice. Mix well. Gradually stir into blueberry mixture. Cook and stir for 30 seconds or until thickened.

Spread berry mixture over baked base to within 1-inch of edge, and sprinkle reserved oat mixture on top. Bake for 18-20 minutes or until golden brown. Cool on wire rack. Cut into bars. Store tightly covered.

Chocolate Chip Oatmeal Cherry Cookies

IMG_0972Once when trying to describe his favorite cookies, my youngest son dubbed these tasty morsels “The Good Cookies”—so now that’s the official title of this recipe at our house. Dried cherries are great because they add a tartness that’s a nice compliment to the sweet chocolate. But they are a tad expensive, so I often substitute craisins for the dried cherries. No one complains. The addition of a cup and a half of oatmeal adds some substance, while not turning them into straight-up oatmeal cookies. Another tip? If you toast—and cool (so they don’t melt the butter)—the pecans before stirring in, it takes these up another notch.

What got me searching for this recipe was a cookie Taste of Scandinavia bakery used to make called the Rocky Road. It was chock full of nuts and dried fruits and chocolate chunks. My son Mitch and I used to grab of couple from the bakery in St. Anthony while waiting for his brother Justin to be done with painting classes. When the bakery at that location changed hands and quit making our faves, we went through withdrawal. I found a white chocolate, macadamia nut, and cherry cookie recipe on allrecipes.com that sounded close to what we craved, so I subbed in semi-sweet chocolate and pecans, and a star was born. (That recipe is no longer posted, or I would credit the author!)

Makes 2 ½ dozen cookies

1 cup butter, softened to room temperature
1 cup dark brown sugar, packed
1 cup white sugar
2 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 ½ cup rolled oats
1 cup semi-sweet chocolate chips
1 cup chopped pecans
1 cup dried cherries or craisins (dried cranberries)

Preheat oven to 350 degrees Fahrenheit. In large mixer bowl, cream butter with beater attachment on electric mixer. Slowly add dark brown sugar, then white sugar, and cream ingredients until fluffy. Add eggs and cream ingredients. Add vanilla and cream ingredients again.

In a separate medium-sized bowl, combine flour, baking powder, baking soda, and salt with a spoon. Slowly add this flour mixture to the creamed butter and sugar mixture until all ingredients are combined. Slowly add rolled oats and stir on low to combine. Remove bowl from mixer, and stir in chocolate chips, nuts, and dried cherries or craisins with a wooden spoon.

Drop by large spoonfuls on to baking sheet. Bake for 10-12 minutes. Let cookies cool for 10 minutes before removing from baking sheet. Store cookies in an airtight container.

Peanut Butter Chip Cookies

IMG_0968Pretty much everyone has a recipe similar to this chewy peanut butter cookie, just like everyone has a favorite recipe for chocolate chip cookies. But I’ve had numerous people tell me mine are especially grand. I once brought these to work, and after her first bite a fellow employee said, “I bet lots of men wanted to marry YOU…” For the record, I’ve only had one marriage proposal, but I’ve had tons of requests for my cookie recipes. I think it’s the addition of the Reese’s peanut butter chips that takes these cookies from good to great.

But I have to admit I wasn’t always such a rock star with this recipe. At the ripe old age of 11 or 12, I wanted to treat my family to a batch of PB Cookies. Once I got to the dough-rolling stage, I felt like something was amiss. “Mom, this dough feels kinda like Play-Doh. Is it supposed to feel like that?” It also looked a little different than I remembered—more sparkly than usual. One pan came out of the oven, and we broke off chunks to test, and promptly spit them out. They tasted like Play-Doh, too!!! What went wrong? My mother and I went back through the ingredients one at a time, and she asked me if I’d put in this and that, and then quizzed me on the amounts. When she got to salt, she said, “Half a teaspoon salt?” and I froze. I’d put in half a CUP of salt. We laughed as we pitched that whole inedible batch in the garbage, and I remember that crazy mistake every single time I make these cookies. As I carefully measure the salt.

Makes 2 1/2 dozen cookies

1 cup shortening (not butter or butter-flavored shortening)
1 cup Skippy’s super chunky peanut butter
1 cup granulated sugar
1 cup dark brown sugar, packed
2 eggs
2 1/2 cups flour
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 of 10 oz. bag of Reese’s peanut butter chips

Preheat oven to 375° Fahrenheit. In large mixer bowl, cream shortening and peanut butter. Add white sugar, then dark brown sugar, and cream ingredients until light and fluffy. Add eggs one at a time, and cream. Add vanilla and cream ingredients again.

In separate bowl, combine flour, baking soda and powder, and salt. Gradually add to creamed mixture and stir until combined. Dough should not be overly-sticky to the touch (too little flour), but also should not be crumbly. (If dough is crumbly, that means you have too much flour in your dough and cookies will be tough, not soft and chewy.) Stir Reese’s peanut butter chips into dough with wooden spoon until chips are incorporated.

Roll tablespoons of dough into balls and place on baking sheet, 12 to sheet. Using tines of fork, make cross-cross pattern on top of cookies, pressing to flatten slightly. Bake for 10-12 minutes, or until edges of cookies are lightly golden brown. Let cool at least 5 minutes before removing to wire rack or container. Store in air-tight container.

Oatmeal Carmelitas

FullSizeRenderOats and caramel and chocolate—oh my! This recipe was entered in the Pillsbury Bake-Off by Minnesotan Erlyce Larson in 1967, and won hands down. One bite of these gooey taste treats, and you’ll agree whole-heartedly with the judges decision. My friend Lois brought these to a gathering at our house, and they were the hit of the dessert table. (I consumed more than my fair share, so that’s why there are so few left on the plate in the photo. Sadly, this image doesn’t do them justice.) My mother makes a similar Caramel Candy Bar (posted a few weeks ago). Mom’s recipe is to die for, but her recipe requires laboriously unwrapping dozens of caramel candies to make the luscious middle layer, while this recipe uses a short-cut—a jar of caramel ice cream topping. Next time you’re planning a party, invite Lois. And ask her to bring these heavenly bars. Mmmmmm.

Crust

2 cups all-purpose or unbleached flour
2 cups old-fashioned oatmeal
1 1/2 cups firmly packed brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups margarine or butter, softened

Filling

1 (12.5 ounce) jar (1 cup) caramel ice cream topping
3 tablespoons all-purpose or unbleached flour
1 cup semisweet chocolate chips
1/2 cup chopped pecans or walnuts

Heat oven to 350° Fahrenheit. Grease 13″ x 9″ pan. In large bowl, combine all crust ingredients; mix at low speed until crumbly. Reserve half of crumb mixture (about 3 cups) for topping. Press remaining crumb mixture in bottom of greased pan. Bake in preheated oven for 10 minutes.

Meanwhile, in small bowl, combine caramel topping and 3 tablespoons flour; blend well.

Remove partially baked crust from oven; sprinkle with chocolate chips and nuts. Drizzle evenly with caramel mixture; sprinkle with reserved crumb mixture. Return to oven; bake an additional 18 to 22 minutes or until golden brown. Cool 1 hour or until completely cooled. Refrigerate 1 to 2 hours or until filling is set. Cut into bars.

Raspberry-Rhubarb Slab Pie

FullSizeRenderWhen my rhubarb plant got beaten up in a fierce summer storm, I needed to get creative in the kitchen and use it or lose it. Browsing online, I came across this raspberry and rhubarb dessert (from tasteofhome.com) that sounded like a fun departure from my usual go-to rhubarb recipes. Plus, I’ve never made a pie crust—unless we did a pastry session in 7th grade foods class. Who can remember? At any rate, I thought I should get outside my baked-goods comfort zone and challenge myself a little.

Whoever coined the phrase “easy as pie” was on drugs. What’s so “easy” about PIE??? I followed the instructions for making the pastry, and got ready to roll out the dough. The directions were to roll it out between layers of waxed paper, but it was too flimsy and the dough was slipping all over the counter and the flour was flying. So I switched to floured parchment paper, and that worked a little better, but it was still no picnic. (That’s another expression I don’t get… Doesn’t making a full meal to bring on a picnic rank up there in culinary challenges? I find it exhausting.)

The next hurdle was trying to get the dough evenly distributed—equal thickness, and sorta in a rectangular shape. After 3 hours (or so it seemed) of huffing and puffing, I did finally get the bottom piece rolled and ready for the fruit filling. But then I had to do it again for the top! Ugh. I just about stabbed myself with the rolling pin. The end result was quite tasty, but I don’t think I’ll be winning any ribbons at the Fair in my lifetime.

On a scale of 1 to 10, I’d give it an 8. I loved the sweet-tart combination of the raspberry and rhubarb, and it was a nice change of pace from strawberry-rhubarb. It would be a fabulous treat to bring to a potluck, as it serves two dozen. I also liked that it was slimmer than a piece of pie, and the crust to fruit-filling ratio was perfect. Had my crust not been so tough, it would have been a perfect dessert. Next time, I’ll buy the Pillsbury refrigerated pie crusts* and save my sanity.

Makes 18-24 servings

3 1/4 cups all-purpose flour
1 teaspoon salt
1 cup butter
3/4 cup plus 1 to 2 tablespoons 2% milk
1 egg yolk
2 cups sugar
1/3 cup cornstarch
5 cups fresh or frozen unsweetened raspberries, thawed and drained
3 cups sliced fresh or frozen rhubarb, thawed and drained

VANILLA ICING

1 1/4 cups confectioners’ sugar
1/2 teaspoon vanilla extract
5 to 6 teaspoons 2% milk

 In a large bowl, combine flour and salt; cut in butter until crumbly. Whisk 3/4 cup milk and the egg yolk; gradually add to flour mixture, tossing with a fork until dough forms a ball. Add additional milk, 1 tablespoon at a time, if necessary. Divide dough into two portions so that one is slightly larger than the other. Wrap each in plastic wrap and refrigerate 1 hour or until easy to handle.

Preheat oven to 375° Fahrenheit. Roll out larger portion of dough between two large sheets of lightly floured parchment paper into an 18″x13″ rectangle. Transfer to an ungreased 15″x10″x1″ baking pan. Press onto the bottom and up sides of pan. Trim pastry to edges of pan.

In a large mixing bowl, combine sugar and cornstarch. Add raspberries and rhubarb, tossing to coat. Spoon into pastry. Roll out remaining dough and place over filling. Fold bottom pastry over edge of top pastry; seal with a fork. Prick top with a fork.

Bake 45-55 minutes or until golden brown. Cool completely on a wire rack.

For icing, combine confectioners’ sugar, vanilla and enough milk to achieve a drizzling consistency; drizzle over pie. Cut pie into squares. Serve warm or room temperature with ice cream.

NOTE: If using frozen rhubarb, measure rhubarb while still frozen, then thaw completely. Drain in a colander, but do not press liquid out.

* Pillsbury also makes a gluten-free refrigerated pie crust option.
